Position Summary

The Pasteurization Specialist is a highly skilled manufacturing position responsible for mix preparation, batching, pasteurization, heating and cooling of processed mixes, ingredient handling, sanitation, quality monitoring, yield control, regulatory documentation, and process execution within the mix room and pasteurization department.

This role is responsible for supporting safe and efficient dairy processing while maintaining compliance with PMO requirements, food safety programs, allergen controls, lot traceability, production documentation, and quality standards. The successful candidate possesses strong technical knowledge of dairy processing systems, frozen dessert manufacturing, sanitation practices, and production operations.

Key Responsibilities

Dairy Processing & Mix Room Operations

  • Prepare and batch ice cream mixes and frozen dessert products according to approved formulas and production specifications
  • Verify ingredient accuracy, lot codes, weights, formulas, and production requirements before use
  • Weigh, stage, organize, and prepare dry and liquid ingredients for production
  • Assist with receiving and verifying dairy ingredients, liquid sugars, milk products, cream, stabilizers, emulsifiers, sweeteners, flavors, and other production materials
  • Support mix preparation, homogenization, heating, cooling, and pasteurization activities
  • Maintain proper storage, labeling, inventory rotation, allergen segregation, and ingredient handling procedures
  • Package mix products according to company specifications and customer requirements when assigned

Pasteurization & Processing Operations

  • Operate and monitor vat pasteurization systems, processing equipment, tanks, pumps, valves, product lines, and related equipment within training and authorization limits
  • Monitor critical control points (CCPs), processing times, temperatures, charts, recording devices, flow requirements, and process controls to ensure compliance with food safety standards
  • Verify pasteurization charts, temperature recordings, batch documentation, and regulatory records
  • Monitor fat content, total solids, allergen controls, cryoscope readings (when applicable), production yields, weights, and other quality measurements
  • Communicate processing deviations, equipment issues, product quality concerns, or regulatory issues to management immediately
  • Support efficient batching, product consistency, flow rates, and overall production performance

Food Safety, Quality & Regulatory Compliance

  • Follow all GMPs, HACCP requirements, CCPs, PMO regulations, SOPs, allergen control procedures, sanitation programs, and company policies
  • Maintain responsibility for food safety, sanitation, and product quality within assigned processing areas
  • Assist with product sampling, quality verification, testing procedures, and production monitoring
  • Identify, document, and report food safety, sanitation, quality, equipment, or regulatory concerns immediately
  • Ensure products meet company, customer, and regulatory quality standards
  • Participate in inspections, audits, corrective actions, and continuous improvement initiatives

Sanitation & Equipment Cleaning

  • Perform CIP, COP, manual cleaning, and sanitation procedures according to company standards
  • Clean and sanitize tanks, vats, pumps, valves, product lines, utensils, and processing equipment
  • Test and monitor cleaning and sanitizing solutions as required
  • Maintain clean, organized, and sanitary production, processing, and storage areas
  • Complete sanitation documentation and cleaning records accurately and on time
  • Assist with equipment teardown, inspection, cleaning, and setup for future production runs

Documentation & Recordkeeping

  • Maintain accurate production, sanitation, receiving, batching, pasteurization, PMO, quality, and traceability records
  • Complete production documentation clearly, accurately, and on time
  • Record temperatures, ingredient usage, production information, sanitation activities, quality checks, and process monitoring data
  • Ensure documentation complies with company SOPs and regulatory requirements
  • Assist in maintaining batch records, lost control, traceability documentation, and production reporting

Education & Experience

  • High school diploma or equivalent required
  • 2–5 years of food manufacturing, dairy processing, mix room, batching, pasteurization, or frozen dessert manufacturing experience preferred
  • Experience operating dairy processing or pasteurization equipment strongly preferred
  • Working knowledge of GMPs, HACCP, CCPs, PMO requirements, sanitation programs, allergen controls, and food safety regulations preferred
  • Experience with CIP systems, ingredient handling, batch documentation, lot tracking, and production records preferred

Skills & Qualifications

  • Strong attention to detail and commitment to food safety and product quality
  • Working knowledge of dairy processing, frozen dessert manufacturing, mix preparation, batching, vat pasteurization, and traceability principles
  • Mechanical aptitude and understanding of food processing equipment
  • Ability to read and interpret formulas, recipes, production specifications, charts, batch records, and SOPs
  • Ability to perform mathematical calculations involving weights, measures, percentages, yields, fractions, decimals, and batch quantities
  • Strong communication, organization, documentation, and problem-solving skills
  • Ability to work independently and collaboratively in a fast-paced manufacturing environment
  • Basic proficiency with Microsoft Word and Excel preferred

Supervisory Responsibilities

  • This position has no direct supervisory responsibilities
  • May provide operational support and technical guidance to production employees but does not independently perform disciplinary actions, hiring decisions, scheduling, performance evaluations, or other management responsibilities unless specifically authorize by management

Physical Demands

  • Frequently lift up to 55 pounds
  • Stand, walk, bend, stoop, crouch, kneel, reach, push, pull, and perform repetitive motions throughout the workday
  • Frequently lift, carry, and move ingredients, supplies, and production materials
  • Work around processing equipment, tanks, pumps, valves, production machinery, wet floors, and sanitation systems
  • Work overtime and extended shifts as operational needs require

Work Environment

  • Mix room, dairy processing, and ice cream manufacturing facility
  • Exposure to wet, humid, refrigerated, and temperature-controlled production areas
  • Exposure to dairy ingredients, allergens, cleaning chemicals, and sanitation products
  • Fast-paced manufacturing environment with changing production priorities
  • Occasional exposure to freezer and cold-storage environments

Work Schedule

Full-time, non-exempt position. Work schedules may include early mornings, evenings, weekends, holidays, overtime, and seasonal production demands based on business needs.
